Capucin steak knives: corbing recalling the hood of Capucin monks
The Capucin steak knife appeared about 250 years ago in the region of Saint-Etienne but it is probably thanks to the shepherds of the Pyrenees that we owe its name, since they carved the handle of their pocket knives in the shape of the hood worn by the Capuchin monks.
Very often used as an icon in the visuals of the label Esprit de Thiers®, the Capucin was adapted for the table by Claude Dozorme, giving this regional product a very current use.
The Capucin steak knife is very ergonomic and lightweight. For the blade of the Capucin steak knife, we use X50CrMoV15, a very high quality steel. So, the Capucin steak knife cut very well, and it’s easy to resharpen.
For the handle, we use methacrylate material (dishwasher safe) or olive wood.
These knives, whose manufacture is signed Claude Dozorme, are 100% made in France in the workshops of Master Cutler since 1902.
